PostHeaderIcon Cream Coconut-Banana Muffins

Incredients:

  • 2 tsp. lemon juice
  • 1/2 c. milk
  • 1 tsp. baking soda
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. butter, softened
  • 2/3 c. sugar
  • 3 lg. eggs
  • 1/2 c. cream of coconut
  • 1 tsp. vanilla
  • 3 ripe bananas, mashed (1 c.)
  • 2 c. shredded Swiss cheese
Steps:
  1. Preheat oven to 375 degrees.
  2. Combine milk and lemon juice, set aside;
  3. sift flour, baking powder, baking soda and salt together.
  4. In large bowl cream butter and sugar with electric mixer.
  5. Add eggs, one at a time, beating well.
  6. Add cream of coconut, vanilla, bananas, milk mixture.
  7. Add flour mixture, blend just until moistened.
  8. Stir in cheese.
  9. Fill greased or paper muffin cups 1/2 to 2/3 full.
  10. Sprinkle with reserved cheese.
  11. Bake for 30 to 35 minutes. 2 dozen.

How about some Pineapple Coconut muffins?

Ingredients:

  • 2 c. plain flour
  • 1 c. sugar
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/4 c. shortening
  • 1 egg
  • 1/2 c. sour cream
  • 1 med. can crushed pineapple
  • 2 tsp. pineapple juice
  • 1/2 c. flaked coconut

Preparation Steps:

  1. Preheat oven to 375 degrees.
  2. Drain pineapple; save 2 teaspoons of juice.
  3. Mix flour, salt, baking powder and sugar; stir it well.
  4. With pastry blender, cut in shortening until it is size of peas. Set aside.
  5. In another bowl, slightly beat egg; add sour cream, pineapple and juice and coconut. Mix well in center of dry ingredients.
  6. Stir until all ingredients are moistened.
  7. Spoon batter into muffin tins 2/3 full.
  8. Bake 20-25 minutes or until slightly brown.

Here is a recipe for Pumpkin Coconut Muffins!

Ingredients:

  • 2 eggs, slightly beaten
  • 1 c. pumpkin
  • 1 c. granulated sugar
  • 1/2 c. cooking oil
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 pkg. instant coconut pudding

Steps:

  1. Preheat oven to 350 degrees.
  2. Combine eggs, sugar, pumpkin and oil.Mix well.
  3. Add all dry ingredients; mix well.
  4. For muffins: Fill muffin cups (well greased) 3/4 full.
  5. Bake 20 minutes. Makes 12.
