Incredients:

  • 2 tsp. lemon juice
  • 1/2 c. milk
  • 1 tsp. baking soda
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. butter, softened
  • 2/3 c. sugar
  • 3 lg. eggs
  • 1/2 c. cream of coconut
  • 1 tsp. vanilla
  • 3 ripe bananas, mashed (1 c.)
  • 2 c. shredded Swiss cheese
Steps:
  1. Preheat oven to 375 degrees.
  2. Combine milk and lemon juice, set aside;
  3. sift flour, baking powder, baking soda and salt together.
  4. In large bowl cream butter and sugar with electric mixer.
  5. Add eggs, one at a time, beating well.
  6. Add cream of coconut, vanilla, bananas, milk mixture.
  7. Add flour mixture, blend just until moistened.
  8. Stir in cheese.
  9. Fill greased or paper muffin cups 1/2 to 2/3 full.
  10. Sprinkle with reserved cheese.
  11. Bake for 30 to 35 minutes. 2 dozen.

Ingredients:

  • 2 c. plain flour
  • 1 c. sugar
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/4 c. shortening
  • 1 egg
  • 1/2 c. sour cream
  • 1 med. can crushed pineapple
  • 2 tsp. pineapple juice
  • 1/2 c. flaked coconut

Preparation Steps:

  1. Preheat oven to 375 degrees.
  2. Drain pineapple; save 2 teaspoons of juice.
  3. Mix flour, salt, baking powder and sugar; stir it well.
  4. With pastry blender, cut in shortening until it is size of peas. Set aside.
  5. In another bowl, slightly beat egg; add sour cream, pineapple and juice and coconut. Mix well in center of dry ingredients.
  6. Stir until all ingredients are moistened.
  7. Spoon batter into muffin tins 2/3 full.
  8. Bake 20-25 minutes or until slightly brown.

  • 2 eggs, slightly beaten
  • 1 c. pumpkin
  • 1 c. granulated sugar
  • 1/2 c. cooking oil
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 pkg. instant coconut pudding

Steps:

  1. Preheat oven to 350 degrees.
  2. Combine eggs, sugar, pumpkin and oil.Mix well.
  3. Add all dry ingredients; mix well.
  4. For muffins: Fill muffin cups (well greased) 3/4 full.
  5. Bake 20 minutes. Makes 12.

This recipe will make 12 muffins.

Ingredients:

  • 1 c. rolled oats
  • 1 c. buttermilk
  • 1 c. sifted flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 melted shortening or oil
  • 1/2 c. brown sugar, packed
  • 1 egg
  • Strawberry preserves
  • 3/4 c. shredded coconut

Steps:

  1. Combine oats and buttermilk.
  2. Soak 30 minutes.
  3. Sift flour, salt, baking soda and powder.
  4. Blend together oil, brown sugar, egg and coconut.
  5. Add oatmeal.
  6. Blend well.
  7. Stir dry ingredients in just until moist.
  8. Spoon in greased tins.
  9. Place small teaspoon of strawberry preserves in center and cover with dab of dough.
  10. Bake at 400 degrees for 20 minutes.
  11. Allow 5-10 minutes to cool
  12. Enjoy!

Ingredients required:

  • 2 c. flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt

  • 2 tbsp. grated orange rind
  • 4 tbsp. melted butter
  • 1/2 c. shredded coconut

Steps:

  1. Sift together all dry ingredients.
  2. Mix eggs and milk.
  3. Add liquids to powders, stir until moistened.
  4. Stir in the orange peeling, melted butter and coconut.
  5. Fill greased muffin tin two-thirds full.
  6. Bake at 425 degrees for 20 to 25 minutes.
  7. Allow 5 minutes to cool down
  8. Enjoy!
