Cream Coconut-Banana Muffins
Incredients:
- 2 tsp. lemon juice
- 1/2 c. milk
- 1 tsp. baking soda
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. butter, softened
- 2/3 c. sugar
- 3 lg. eggs
- 1/2 c. cream of coconut
- 1 tsp. vanilla
- 3 ripe bananas, mashed (1 c.)
- 2 c. shredded Swiss cheese
Steps:
- Preheat oven to 375 degrees.
- Combine milk and lemon juice, set aside;
- sift flour, baking powder, baking soda and salt together.
- In large bowl cream butter and sugar with electric mixer.
- Add eggs, one at a time, beating well.
- Add cream of coconut, vanilla, bananas, milk mixture.
- Add flour mixture, blend just until moistened.
- Stir in cheese.
- Fill greased or paper muffin cups 1/2 to 2/3 full.
- Sprinkle with reserved cheese.
- Bake for 30 to 35 minutes. 2 dozen.
Pineapple Coconut Muffins

Ingredients:
- 2 c. plain flour
- 1 c. sugar
- 1 tsp. salt
- 1 tsp. baking powder
- 1/4 c. shortening
- 1 egg
- 1/2 c. sour cream
- 1 med. can crushed pineapple
- 2 tsp. pineapple juice
- 1/2 c. flaked coconut
Preparation Steps:
- Preheat oven to 375 degrees.
- Drain pineapple; save 2 teaspoons of juice.
- Mix flour, salt, baking powder and sugar; stir it well.
- With pastry blender, cut in shortening until it is size of peas. Set aside.
- In another bowl, slightly beat egg; add sour cream, pineapple and juice and coconut. Mix well in center of dry ingredients.
- Stir until all ingredients are moistened.
- Spoon batter into muffin tins 2/3 full.
- Bake 20-25 minutes or until slightly brown.
Pumpkin Coconut Muffins

- 2 eggs, slightly beaten
- 1 c. pumpkin
- 1 c. granulated sugar
- 1/2 c. cooking oil
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 pkg. instant coconut pudding
Steps:
- Preheat oven to 350 degrees.
- Combine eggs, sugar, pumpkin and oil.Mix well.
- Add all dry ingredients; mix well.
- For muffins: Fill muffin cups (well greased) 3/4 full.
- Bake 20 minutes. Makes 12.

Oatmeal Coconut Muffins Recipe
If you love Oatmeal and coconut, you will love these muffins!
This recipe will make 12 muffins.
Ingredients:
- 1 c. rolled oats
- 1 c. buttermilk
- 1 c. sifted flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/2 melted shortening or oil
- 1/2 c. brown sugar, packed
- 1 egg
- Strawberry preserves
- 3/4 c. shredded coconut
Steps:
- Combine oats and buttermilk.
- Soak 30 minutes.
- Sift flour, salt, baking soda and powder.
- Blend together oil, brown sugar, egg and coconut.
- Add oatmeal.
- Blend well.
- Stir dry ingredients in just until moist.
- Spoon in greased tins.
- Place small teaspoon of strawberry preserves in center and cover with dab of dough.
- Bake at 400 degrees for 20 minutes.
- Allow 5-10 minutes to cool

Orange Coconut Muffins Recipe

- 1/2 tsp. salt
- 2 tbsp. sugar
- 2 eggs, well beaten
- 1 c. milk
- 2 tbsp. grated orange rind
- 4 tbsp. melted butter
- 1/2 c. shredded coconut
Steps:
- Sift together all dry ingredients.
- Mix eggs and milk.
- Add liquids to powders, stir until moistened.
- Stir in the orange peeling, melted butter and coconut.
- Fill greased muffin tin two-thirds full.
- Bake at 425 degrees for 20 to 25 minutes.
- Allow 5 minutes to cool down
